Making Tortillas at the Hands on Skills Fair

“Making your own tortillas is easy!” said Kim Sims, the instructor for the tortilla class at this past weekend’s Sustainable NE Seattle Hands on Skills Fair.
She was right; within a few minutes several students had made some well shaped and tasty tortillas.
Here’s the delicious recipe.
According to Kim adding a teaspoon of duck fat or lard makes the tortillas stick together better and helps them to brown nicely. Mixing is also easier if the water is hot.
Masa is a corn flour with lime added.
Put the flour and water in a bowl with the salt.
Mix well. Mixture should make a slightly tacky ball.
Place a ball of dough on a tortilla press.
Squish slightly with your fingers. Using plastic on the press makes clean-up a snap and can lessen sticking.
Cook both sides on a hot, ungreased griddle.
