Annette, from Sustainable Eats blog, wasn’t sure how her first experience killing a cute, fuzzy bunny would go. But after considering the various other (less sustainable) meat options available, she decided knowing more about rabbits would be the responsible choice.
As she points out, rabbits are efficient meat producers as they require comparatively little input before reaching an edible size. They need much less space than most animals we eat (cows, pigs, lambs). Needless to say, rabbits also have a reputation for breeding efficiently. Taking this all into consideration, Annette concluded that rabbit is the “ultimate sustainable meat.”
Her next step was learning about the processing procedure to ensure eating rabbit wasn’t just a sustainable option, but also the humane one. She took a class from Brad Andonian of Abundant Acres Farm to test it out. Though she was dreading the moment the deed would take place, she found the process to be manageable and simple: “…set the rabbit down on the ground while stroking to keep them calm, place a broomstick handle across the back of the neck, step down solidly on each end of the handle, firmly grasp the rabbit’s feet and pull straight up on the hind legs until the neck is dislocated.”
